Our Dark Munich Malt produces a unique rich dark malt, freshly baked bread crust and the characteristic Munich bite at the back of the palate. Over a period of three to six days, the seed develops a rootlet and a sprout. As the moisture content is reduced, the maltster increases the temperature until it reaches 212 °F, and it is held at this temperature for as long as 5 hours. Strecker aldehydes such as isovaleraldehyde tend to impart flavors described as biscuity or malty.

A related chemical reaction to melanoidin formation is called Strecker degradation. While a certain degree of confidence can be placed on buying good European floor-malted malts, there can be no substitute for the practical results in a given brewhouse and recipes. Like the classic Maillard reactions, Strecker degradation involves an amino acid such as leucine or valine reacting with a reducing sugar to form an aldehyde and a Strecker aldehyde, mainly during the malting process.
